Secret Chocolate Pudding
- 2 ripe avocadoes small to medium sized
- ¾ cup unsweetened coconut milk
- ¼ cup maple syrup
- 3 Tblsp natural cacoa powder
- 1 tsp vanilla extract
- ~80 gms 85% dark chocolate
- Optional garnish: pomegranate seeds shredded coconut, cacoa nibs.
Cut avocadoes in half and scoop flesh into a blender. I used my NutriBullet, which worked great! Add the rest of the ingredients, except the chocolate, and blend until smooth. Melt the chocolate in a small glass bowl in the microwave or in a small saucepan over the stove on low heat. Make sure not to burn the chocolate. Add the melted chocolate to the blender and blend until smooth. Spoon the mixture into 4 small dishes and refrigerate to allow the pudding to thicken a bit. Top with optional garnishes: pomegranate seeds, shredded coconut, cacao nibs.
